Pad Thai
One of the best-known Thai dishes in the world, and street food at heart, tossed in a hot wok: rice noodles with prawns or chicken, egg, bean sprouts and spring onion, crunchy peanuts, and a wedge of lime on the side, for a rich mix of flavours.
