Rendang
Rendang is not Balinese in origin: it is credited to the Minangkabau people of West Sumatra, and it is now one of Indonesia's national dishes, found in restaurants all over Bali. Beef is cooked in coconut milk with ginger, galangal, lemongrass and chilli for about five hours, until the liquid has gone and the meat is coated in a dark, thick sauce. A CNN poll in 2011 named it the most delicious dish in the world, and as a beef dish it is easy to have halal.
