One of the best-known Russian dishes in the world, it carries the name of the Stroganov family; the first known recipe appeared in Elena Molokhovets's cookbook of 1871. Tender strips of beef are sautéed, then finished in a sauce of smetana and mustard, often with mushrooms and onions. In Russia it is traditionally served with crisp straw potatoes; abroad, with rice or noodles.
