Olivier salad
Салат Оливье
Created in the 1860s by Lucien Olivier, chef of Moscow's Hermitage restaurant, whose original recipe used hazel grouse and crayfish tails. Today it is boiled potato, peas, carrot, egg and pickled cucumber, with sausage or chicken, dressed in mayonnaise. It is on almost every Russian New Year table, and we ask for it made with chicken.
Halal dining can be arranged at every hotel we recommend; tell us your preferences and we brief the chefs before you arrive.
