Kaya toast
Kaya is a jam of coconut, egg, sugar and pandan leaves, put in place of fruit jam by the Hainanese cooks who worked on British ships. It is spread on toast with butter and served with two soft-boiled eggs seasoned with dark soy and white pepper, and a cup of local kopi. The traditional coffee-shop chains, Ya Kun, Killiney and Toast Box, all serve it.
